Winter Cauliflower Curry

    A very spicy and hearty vegetarian curry, the perfect thing for warming you up in the winter. You can reduce the spices if you like, it's a lot easy to add them than take them out!

    Ingredients
    Serves: 4 

    • 2 tablespoons vegetable oil
    • 2 onions, diced
    • 2 cloves garlic, diced
    • 5cm fresh ginger, diced
    • 1 red capsicum, seeded and diced
    • 2 teaspoons paprika
    • 2 teaspoons cumin
    • 2 teaspoons ground coriander
    • 2 pinches cinnamon
    • seeds of 8 cardamom pods
    • 2 bay leaves
    • salt, to taste
    • 150g plain yoghurt
    • 150ml water
    • 3 sweet potatoes, diced
    • 1 head cauliflower, cut into florets
    • 3 carrots, sliced
    • 2 parsnips, diced
    • 2 tomatoes, diced
    • fresh coriander, to garnish

    1. Heat the oil in a frypan and saute the onions, garlic and ginger until the onions are golden brown. Add all of the spices and salt to taste.
    2. Reduce heat and stir in the yoghurt, water, sweet potatoes, cauliflower, carrots and parsnips. Simmer, covered, 30 minutes.
    3. Add the tomatoes and simmer another 3 minutes. Remove the bay leaves and serve, garnished with coriander.
