Homemade apricot jam is always worth the effort and so much fun to make! This recipe has a little vanilla and lemon to broaden the flavours.


Makes: 4 jars jam

  • 1 kg apricots, pitted and diced
  • juice of 1 lemon
  • 750g icing sugar
  • 200ml water
  • 1 teaspoon vanilla extract

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Place the apricots in a saucepan with lemon juice, sugar and water. Place a cooking thermometer in the mixture and bring to a simmer.
  2. Once the jam boils, add the vanilla extract. Simmer until the jam reaches 105 degrees C, then turn off the heat. Let cool a little, ladle into sterilised jars and seal.
