    When stone fruit are really ripe and in season, put them up for winter with this strawberry and peach jam. Ginger adds a little fire to awaken your taste buds!

    Serves: 4 

    • 500g peaches, peeled, stoned and diced
    • 300g strawberries, hulled and diced
    • 400g white sugar
    • 15g fresh ginger, finely diced
    • juice of 1 lemon

    Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Combine all ingredients in a saucepan. Simmer over low heat 40 minutes, until thickened. Test the jam by smearing some on a cold plate: it should congeal quickly.
    2. Transfer to sterilised jars, let cool and keep in a cool dark place.
