Allergy Free Golden Cake

    This cake contains no egg, dairy, nuts or soy. The recipe has evolved from another All Recipes cake as we've made changes to suit our family.

    Makes: 1 cake

    • 185g Olivani(TM), or another dairy free spread
    • 125g sugar
    • 2 tablespoons golden syrup
    • 1 cup rice milk
    • few drops vanilla essence
    • 1/2 cup custard powder
    • 1 1/2 cups plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda

    1. Melt the spread, sugar, golden syrup, rice milk and vanilla over a low heat.
    2. Once melted add the flour, custard powder, baking powde, and bicarb soda then whisk well until smooth.
    3. Pour into a greased, lined tin and bake in an oven preheated to 180 degrees C for approx. 30mins. Test with a skewer to decide when done.
    4. Cool on a rack. Be careful when turning out to cool as this cake is moist and best cooled right side up.
