Festive Lychee Fruit Salad

    This salad of tropical fruits - lychees, pineapple, mango, bananas - has a little rum added so it's great as a Christmas dessert.

    Serves: 4 

    • 200g fresh or tinned lychees, peeled
    • 1 small sweet pineapple, peeled and cut into chunks
    • 1 mango, peeled and cubed
    • 2 bananas, sliced
    • 2 kiwifruit, peeled and sliced
    • 250g raspberries
    • 1 tablespoon icing sugar
    • 100ml rum
    • 1 vanilla bean

    1. Place all the fruit in a large serving bowl and sprinkle with icing sugar.
    2. Slit open the vanilla bean and scrape out the seeds. Distribute the seeds over the fruit.
    3. Drizzle with rum and mix gently. Chill at least 30 minutes before serving.
