Slow Cooker Beef Curry

    If you want to make this slow cooker curry a bit richer, stir in half a cup of yoghurt just before serving. Serve with white rice and naan bread.

    Serves: 6 

    • 1 tablespoon vegetable oil
    • 1 kg beef chuck, cubed
    • 2 onions, diced
    • 4 cloves garlic
    • 1 teaspoon fresh ginger, diced
    • 2 green chillies, sliced
    • 2 teaspoons cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon turmeric
    • 1 teaspoon salt
    • 1/2 teaspoon black pepepr
    • 4 cardamom pods
    • 4 cloves
    • 1/2 cup beef stock
    • 1 bay leaf

    1. Heat the oil in a saucepan and brown the beef in batches. Transfer to the slow cooker.
    2. To the saucepan, add onions and cook until softened. Add garlic, ginger, chillies, cumin, coriander, turmeric, salt, pepper, cardamom and cloves. Cook one minute. Add stock and bay leaf and bring to a simmer.
    3. Pour the onion mixture over the beef and stir. Cover and cook on Low for 8-10 hours or High for 4-5 hours, until beef is very tender.

    Tried this recipe with wild game (caribou). Green chiles must not have been spicy enough because it didn't turn out spicy at all. Flavor was ok but the meat, while tender, seemed a little dried out, despite cooking in plenty of juices.
