Thai Marinated Prawn Salad


    Bring the tastes of Thailand to your next barbecue or dinner with this marinated prawn salad flavoured with lime, lemongrass, ginger and chilli!

    Serves: 2 

    • For the marinade
    • 12 raw king prawns
    • pinch salt
    • 1 tablespoon sesame oil
    • 2 tablespoons soy sauce
    • 1/4 bunch fresh coriander, finely chopped
    • For the vinaigrette
    • 1 clove garlic, crushed
    • 2 stalks lemongrass, finely diced
    • 15g fresh ginger, crushed
    • 1 green chilli, finely diced
    • zest and juice of 2 limes
    • 1 1/2 tablespoons soy sauce
    • 3 tablespoons sesame oil
    • For the salad
    • 1 heart of cos lettuce
    • 1 red onion, diced
    • 1 cucumber, diced
    • 1 red capsicum, seeded and cut into thin strips

    1. Peel the prawns, leaving the tails intact. Place in a bowl, season with a little salt, the sesame oil and soy sauce. Sprinkle with coriander and let marinate 20 minutes.
    2. Meanwhile, prepare the dressing. In a small bowl combine the garlic, lemongrass, ginger, chilli, lime juice and zest, soy sauce and sesame oil.
    3. Arrange the lettuce leaves in a serving dish. Add onion, cucumber and capsicum then drizzle with the vinaigrette.
    4. In a hot frypan, saute the prawns about 5 minutes, turning so they cook evenly. Arrange the prawns on the salad and add a few sprigs coriander to garnish.
