Marinated Prawn Kebabs

Try this barbecue prawn marinade which has a touch of pomegranate molasses. You can find the molasses at gourmet and Middle Eastern shops.

- Marinade
- 60ml olive oil
- 1 tablespoon lime juice
- 1 tablespoon Worcestershire sauce
- 8 drops Tabasco
- 1/2 teaspoon pomegranate molasses
- 4 cloves garlic, crushed
- salt and pepper, to taste
- handful fresh coriander, chopped
- Kebabs
- 500g large prawns, peeled
- 1 red capsicum, cut into squares
- 1 white onion, cut into wedges
- 3-4 tomatoes, cut into wedges
- 6 large mushrooms, quartered

- Combine all marinade ingredients in a bowl and marinate the prawns one hour in the refrigerator.
- At the end of the marinating time, thread the prawns onto skewers, alternating with the vegetables.
- Heat the barbecue. Cook skewers 5-7 minutes until prawns are done, turning halfway through the cooking time.
