This is my favourite recipe to cook saturday nights when i come home from the hockey complex though they are great any night of the week. Quick, easy, and delicious.
This recipe is so versatile, I have omitted the vegetables and just used eggs and bacon, or seafood and onion. I have also cooked this recipe in a hostel kitchen for my partner and I with onion, capsicum, egg, tomato, bok choy and bacon. This recipe reheats really well as we have had leftovers for breakfast.
