Fresh dill livens up this green prawn curry. Shrimp paste is easily found in the Asian section of the supermarket and adds a nice depth.

Serves: 4 

  • 3 tablespoons vegetable oil
  • 5 tablespoons Thai green curry powder
  • 1 tablespoon shrimp paste
  • 1 tablespoon white sugar
  • 2 cups coconut milk
  • 2 cups chicken stock
  • fish sauce, to taste
  • 2 potatoes, peeled and diced
  • 700g king prawns, peeled and deveined
  • 1 bunch fresh dill

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Heat the oil in a saucepan and stir fry the curry paste for 2 minutes. Add shrimp paste and sugar and stir fry a minute more.
  2. Reduce heat and add coconut milk, stock and fish sauce. Add the potatoes, cover and simmer 20 minutes.
  3. Add the prawns and stir, recover and simmer five minutes. Serve, garnished with dill.
