Lamb and Tomato Curry

    About as simple as it gets, this curry is nothing more than lamb and tomatoes simmered together. It is lovely with chutney and naan bread.

    Serves: 3 

    • 1/4 cup vegetable oil
    • 1 onion, diced
    • 2 teaspoons garlic ginger paste
    • 500g tomatoes, diced
    • salt, to taste
    • 1 teaspoon chilli powder
    • 1 teaspoon cumin
    • 3 cardamom pods
    • 5 cloves
    • 1 bay leaf
    • 500g lamb, cubed
    • 1 cup water
    • 1/4 cup coriander leaves

    1. Heat the oil in a saucepan and brown the onion. Add garlic ginger paste, tomatoes, salt, chilli powder, cumin seeds, cardamom pods, cloves and bay leaf. Cook, stirring, until the oil separates out.
    2. Add the lamb and fry 5 minutes. Add water, cover and reduce heat. Simmer 1 hour. Stir in the coriander leaves and serve.
