Squid Curry

    Squid needs to be cooked either very briefly, or simmer for a while or else it will be rubbery. This is a delicious seafood curry from Southern India.

    Serves: 4 

    • 3 tablespoons vegetable seeds
    • 1/2 teaspoon mustard seeds
    • 2 large onions, sliced
    • 3 green chillies, slit
    • 3cm fresh ginger, sliced
    • 1/2 teaspoon chilli powder
    • 1/2 teaspoon ground coriander
    • 2 large tomatoes, sliced
    • 400g cleaned squid tubes and tentables, cut into 1cm pieces
    • coriander leaves, to garnish

    1. Heat the oil in a large frying pan and add mustard seeds. Fry them until they start to pop, then add onions and cook 5 minutes until golden.
    2. Stir in green chillies and ginger, then add chilli powder and coriander. Mix well. Add tomatoes and cook 10 minutes until tomatoes break down.
    3. Add squid and mix. Cover and cook over low heat 15 minutes, stirring occasionally. Serve with coriander leaves to garnish.
