Prawn Masala Curry

    This is a lovely way to cook fresh king prawns. It's a quick and simple curry which is great with plain rice or Indian bread like roti or naan.

    Serves: 4 

    • 3 tablespoons vegetable oil
    • pinch cumin seeds
    • 10 curry leaves
    • 3 onions, sliced
    • 1/2 teaspoon turmeric
    • 1 teaspoon chilli powder
    • 1 teaspoon tomato paste
    • 4 tomatoes, sliced
    • 3cm fresh ginger, sliced
    • salt, to taste
    • 500g king prawns, peeled but with tails left on
    • coriander leaves, to garnish

    1. Heat the oil in a large frying pan. Add the cumin seeds, curry leaves and onions. Cook over a low heat 10 minutes, stirring until onions are browned.
    2. Add turmeric, chilli powder, tomato paste, tomatoes, ginger and salt to taste. Cook 5 minutes, stirring.
    3. Add the prawns and simmer 6 minutes or until just pink and cooked. Serve with coriander leaves to garnish.
