Coconut Fish Curry

    This is a mild fish curry with a creamy smooth flavour from fresh coconut. Serve it simply with plain rice or naan bread for an easy meal.

    Serves: 6 

    • 2 tablespoons vegetable oil
    • 200g onion shallots, diced
    • 10 curry leaves
    • 500g white fish fillets, cut into chunks
    • 1 tablespoon lemon juice
    • Spice paste
    • 100g fresh shredded coconut
    • 1 teaspoon ground coriander
    • 1/2 teaspoon chilli powder
    • pinch turmeric
    • 3/4 cup water

    1. Make the spice paste by combining the ingredients in a blender.
    2. Heat the oil in a large frying pan. Add shallots and curry leaves and cook until softened, about 5 minutes. Stir in the spice paste along with another 3/4 cup water and bring to the boil. Simmer 5 minutes until thickened.
    3. Add the fish and lemon juice. Cook 5 minutes and serve immediately.
