Simple Prawn Cocktail

    You can't really go wrong here - use small sweet prawns where possible and serve them on lettuce with tomato sauce and Tabasco.

    Ingredients
    Serves: 4 

    • 1 head iceberg or butter lettuce
    • 600g prawns, peeled and cooked
    • tomato sauce, to taste
    • few drops Tabasco (TM)
    • juice of 1/2 lime
    • salt and pepper, to taste

    Directions

    1. Cut the lettuce into thin strips.
    2. In a bowl, combine prawns, tomato sauce (just enough to lightly coat the prawns), Tabasco, lime juice and salt and pepper to taste.
    3. In juice or wine glasses, place some of the lettuce and top with prawn mixture. You can garnish with a slice of lime if you like. Delish!
