Prawn and Potato Cocktail

    A different take on prawn cocktail but so good. You can serve this on little butter lettuce leaves which you roll up like a taco.

    Serves: 4 

    • 600g new potatoes, peeled and diced
    • 2 tablespoons vegetable oil
    • 1 small red onion, thinly sliced
    • 1 clove garlic, crushed
    • 1 small red chilli, seeded and diced
    • 1 teaspoon coriander seeds, crushed
    • 1 teaspoon cumin seeds, crushed
    • salt and pepper, to taste
    • 1 large avocado, peeled and cubed
    • 400g prawns, peeled and cooked
    • juice of 2 limes

    1. Bring a saucepan of water to the boil and blanch the potatoes about 8 minutes or until they are tender but not mushy. Drain.
    2. Heat the vegetable oil in a frypan. Fry the onion 3 minutes then add garlic, chilli, coriander and cumin. Fry one more minute then add the potatoes and salt to taste. Saute about 5 minutes. Place in a bowl and let cool.
    3. When cool, add the avocado and prawns. Add the lime juice and mix gently. Chill and serve!
