    It may seem strange to use this much oil in a cake but this is a great Italian honey cake recipe, very moist, tender and fragrant.

    Makes: 1 cake

    • 3 eggs
    • 3/4 cup honey
    • 1 1/2 cups extra virgin olive oil
    • 1 1/2 cups milk
    • 2 teaspoons lemon juice
    • zest of 1 lime
    • 2 cups cake flour, sifted
    • 1 teaspoon baking powder
    • 1 teaspoon bicarb soda
    • 1/2 teaspoon salt
    • icing sugar, for dusting

    1. Preheat the oven to 200 degrees C and grease a 23cm round cake tin.
    2. Beat the eggs and honey with an electric beater. Beat in the oil, milk, lemon juice and zest. Sift in the flour, baking powder, bicarb soda and salt. Mix.
    3. Pour batter into the cake tin and bake until it tests done, about 35 minutes. Let cool and dust with icing sugar.

    Tasted alright but cake was way too oily. Might work if you reduced the oil by half or more.  -  14 May 2017
