Lemon Buttercream Icing

    Since this lemon icing contains raw eggs, make sure you use good quality ones, organic for preference. Fresh lemons are good too!

    • 2 egg whites
    • 2/3 cup white sugar
    • 160g unsalted butter, cubed
    • 1 tablespoon lemon zest
    • 1/4 cup lemon juice

    1. Beat the egg whites and sugar together at high speed until it forms glossy stiff peaks. Add the butter pieces while beating. Add lemon zest and juice and beat until smooth. Use immediately.
