Ganaches are so simple to make and are simply one of the best ways to ice or fill a cake. Do not over beat it or it will become grainy.

Makes: 2 cups

  • 1 cup thickened cream
  • 170g white chocolate, diced

Preparation:10min  ›  Extra time:6min chilling  ›  Ready in:16min 

  1. Heat the cream to a simmer in a small saucepan. Pour over the diced chocolate in a mixing bowl, let sit a minute then whisk until smooth. Cover and chill six hours.
  2. Beat the ganache with an electric beater until it has the consistency of whipped cream but don't over beat.
