Peanut Butter Ganache

    You can use this chocolate and peanut butter ganache either to frost a cake or fill one (or both). It's best with plain cakes.

    Makes: 2 cups icing

    • 1 1/2 cups thickened cream
    • 1/2 cup smooth peanut butter
    • pinch salt
    • 220g milk chocolate, diced

    1. In a small saucepan, heat the cream until it is just about to simmer. Add peanut butter and salt and whisk until smooth. Pour over the chocolate in a mixing bowl and whisk until melted and smooth. Cover and chill 4 hours before using.
