Orange Buttercream Icing

    Orange buttercream is perfect on a carrot cake or a butter cake. This icing will keep three days in the refrigerator which saves work when you make the cake.

    Serves: 4 

    • 3/4 cup white sugar
    • 4 egg whites
    • 30ml water
    • 340g butter, softened
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon orange extract
    • 1 teaspoon Grand Marnier

    1. Pour 1cm water into a frypan and bring to a simmer.
    2. In an electric mixer bowl combine sugar, egg whites and water. Put the bowl in the frypan of simmering water and whisk gently until mixture is 70 degrees C (check with a thermometer). Move the bowl to the mixer and whisk at medium high speed until it forms stiff peaks, about 5 minutes.
    3. Reduce speed and beat in the butter, one tablespoon at a time. Beat in the vanilla extract, orange extract and Grand Marnier until smooth.
