Sour Cream Chocolate Fudge Cake

    I think this chocolate fudge cake is best served in the tin it is baked in. I also like it with a peanut butter frosting for extra richness.

    Makes: 1 cake

    • 2 1/4 cups cake flour
    • 1 1/2 teaspoons bicarb soda
    • 1/2 teaspoon salt
    • 85g dark chocolate, diced
    • 170g unsalted butter, softened
    • 2 21/4 cups white sugar
    • 3 eggs
    • 2 teaspoons vanilla extract
    • 3/4 cup sour cream
    • 3/4 cup hot water

    1. Preheat the oven to 160 degrees C. Grease and flour a 22x33cm cake tin.
    2. Sift together the flour, bicarb soda and salt.
    3. Melt the chocolate in a double boiler or the microwave. Let cool until just warm.
    4. In the bowl of an electric mixer, beat the butter until creamy. Add sugar and beat until light and fluffy, about 3 minutes. Add the eggs one at a time and beat. Add vanilla. Add chocolate and mix well. Add flour, alternately with sour cream. Gradually add hot water until blended. Pour into cake tin.
    5. Bake 50 minutes or until it tests done.
