Chicken Breasts alla Parmigiana

    Boneless skinless chicken breast halves are simply floured and coated with bread crumbs and cheese then fried. Delicious and simple chicken parmigiana.

    Serves: 4 

    • 4 boneless skinless chicken breast halves
    • 1/2 cup flour
    • 1/4 teaspoon nutmeg
    • salt and pepper, to taste
    • 2 eggs, lightly beaten
    • 3/4 cup bread crumbs
    • 1/4 cup grated Parmesan
    • 80g butter, melted
    • 4 lemon wedges

    1. Toss the chicken with flour, nutmeg, salt and pepper. Dip the chicken in the eggs and then coat with a mixture of the bread crumbs and Parmesan cheese.
    2. Heat the butter in a frypan and brown the chicken on all sides. Serve with lemon wedges.
