This chicken parmigiana meal is simplicity itself to throw together so long as you are comfortable breaking down a whole chicken!

Serves: 4 

  • 1 small chicken, cut into serving pieces
  • salt and pepper, to taste
  • 1/4 cup olive oil
  • 1 cup mushrooms, sliced
  • 1 green capsicum, diced
  • 1/2 cup onion, diced
  • 1 clove garlic, diced
  • 2 cups tomatoes, diced
  • 1/2 cup dry vermouth
  • 1/2 cup stuffed green olives, sliced
  • 1/4 cup grated Parmesan

  1. Preheat the oven to 180 degrees C. Sprinkle the chicken pieces with salt and pepper and brown on all sides in the olive oil. Add the mushrooms and cook 5 minutes.
  2. Add the capsicum, onion, garlic, tomatoes and vermouth. Cover and simmer 30 minutes. Add olives and simmer 10 more minutes. Serve with grated cheese.
