Sweet and Sour Chicken Curry

A slightly different sweet and sour chicken dish, this recipe is simply made in a casserole dish and includes beetroot. Serve with rice.

Serves: 4 

  • 1 whole chicken, cut into serving pieces
  • 1 1/2 cups onion, finely diced
  • 1 clove garlic, finely diced
  • 1 teaspoon fresh ginger, finely diced
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garam masala
  • salt and pepper, to taste
  • 1 tablespoon tomato paste
  • 1 cup water
  • 1/2 tin sliced beetroot
  • 2 tablespoons lemon juice
  • 2 teaspoons brown sugar

  1. Place the chicken in a casserole dish and add onion, garlic, ginger, turmeric, cumin, coriander, garam masala, salt, pepper, tomato paste and water. Cover bring to a boil then simmer 1 hour until almost dry.
  2. Add the beetroot, lemon juice and sugar. Simmer another 15 minutes.
