I think homemade stock is the basis of all good cooking! The stock will taste a little bland because it has no added salt, you will add the salt when you use the stock.

Makes: 2 litres stock

  • 1 1/2 kg chicken backs and necks
  • 4 stalks celery, roughly diced
  • 6 carrots, roughly sliced
  • 2 onions, peeled and quartered
  • 8 black peppercorns
  • 3 litres cold water

  1. Place the chicken backs and necks in a stockpot and rinse with very hot water. Drain, return the bones to the stockpot and add all ingredients. Bring to a simmer and simmer 2 hours. Skim the foam when it first rises.
