Marinated Sesame Chicken Wings

    These marinated chicken wings are easy to prepare and very tasty due to the addition of sesame seeds and almond meal in the coating.

    Makes: 24 wings

    • 12 whole chicken wings
    • 4 cups oil for deep frying
    • Marinade
    • 1 tablespoon soy sauce
    • 1 tablespoon sherry or Chinese rice wine
    • 1/2 teaspoon grated ginger
    • 2 egg whites, beaten
    • Coating
    • 2 tablespoons almond meal
    • 4 tablespoons cornflour
    • 1/2 tablespoon plain flour
    • 2 tablespoons sesame seeds

    1. Cut each wing into three pieces and discard the tips (or keep for stock). Mix together the marinade ingredients except the egg whites and marinate the wings 1 hour.
    2. Mix the coating ingredients together and heat up the oil. Drain the wings, dip in egg white and coat with coating mixture. Deep fry in batches until golden brown, about 5 minutes.
