Soak the noocles in boiling water for 10 minutes. Drain.
Heat oil in a wok. Add spring onions and garlic and cook 1 minute. Add chicken mince and cook 2 more minutes, until almost done.
Add prawns, sugar, tomato sauce, vinegar and fish sauce and toss well. Add noodles and cook, tossing, for 3 more minutes until prawns are cooked through. Pour in the eggs and toss to scramble.
Put the noodles and bean sprouts on 4 plates. Sprinkle with peanuts and coriander.
