Easy Chicken Pasta with Cherry Tomatoes

    Fresh basil and tomatoes are the best way to celebrate the hotter months. This is a pesto recipe you can use in other meals too.

    Serves: 4 

    • 1 cup fresh basil leaves
    • 1/4 cup olive oil
    • 2 tablespoons pine nuts
    • 1 clove garlic
    • salt, to taste
    • 1/2 cup Parmesan, grated
    • 300g penne
    • 2 tablespoons olive oil
    • 350g boneless skinless chicken breast fillets, thinly sliced
    • 2 cups cherry tomatoes, halved

    1. In a food processor, combine the basil, oil, pine nuts, garlic and salt to taste. Add half the Parmesan. Puree.
    2. Cook the pasta until al dente according to packet instructions. Drain.
    3. Heat the remaining oil in a frypan and stir fry the chicken 2 minutes, or until no longer pink. Add cherry tomatoes and cook 3 minutes. Add the basil mixture and toss with the pasta. Serve with remaining Parmesan.
