Apricot Chicken in Wine

This is a pretty simple apricot chicken recipe to throw together but it seems fancy enough to impress guests. Serve with rice and a salad.

Serves: 4 

  • 1 cup dried apricots
  • 1/2 cup dry sherry
  • 1/2 cup red wine
  • 3 strips orange zest
  • 1/3 cup sugar
  • 2 tablespoon butter
  • 8 bone-in skinless chicken thighs
  • 2 tablespoons flour
  • 300g pearl onions, peeled
  • 1/2 cup chicken stock
  • salt and pepper, to taste

  1. In a saucepan, combine the apricots, sherry, red wine, zest and 3 tablespoons sugar. Bring to a boil, reduce heat, cover and simmer 20 minutes.
  2. Melt butter in a frying pan over medium heat. Coat the chicken with flour and brown on both sides, about 8 minutes total. Remove and set aside.
  3. Add the pearl onions to the frying pan and sprinkle with remaining sugar. Cook until lightly browned, about 7 minutes. Add the stock, salt, pepper and apricots then bring to a boil.
  4. Return the chicken to the pan, reduce to a simmer, cover and cook 15 more minutes. Remove the zest and serve.
