    Tandoori chicken is easy to make on the barbecue and full of spicy flavour. It's best served with rice and a cooling cucumber raita.

    Serves: 4 

    • 4 boneless skinless chicken breast halves
    • Marinade
    • 1 cloves garlic, crushed
    • 1 tablespoon fresh ginger, finely diced
    • 1 1/2 tablespoon tomato paste
    • 1 1/2 teaspoons garam masala
    • 1 1/2 teaspoons ground coriander
    • 1 1/2 teaspoons cumin
    • 1/4 teaspoon turmeric
    • pinch cayenne
    • 1/2 cup plain yoghurt
    • few drops red and yellow food colouring (optional)

    1. In a bowl, combine all marinade ingredients. Set aside 1/2 cup to use as a baste.
    2. Cut two slits into each chicken breast to allow marinade to penetrate. Mix into the marinade and marinate 2 hours.
    3. Preheat the barbecue and brush the grate with oil. Cook the chicken breasts for 15 minutes, basting and turning as necessary, until done and just slightly charred.
