    A simple oven baked Moroccan chicken recipe which is just as good cold on a picnic as it is hot for dinner. Try it with drumsticks and thighs.

    Ingredients
    Serves: 4 

    • 2 kg chicken pieces
    • 1 1/2 cups yoghurt
    • 2 tablespoons lemon juice
    • 1 1/2 teaspoons salt
    • 1 cup flour
    • 2 teaspoons paprika
    • 1 1/2 teaspoons turmeric
    • 1 teaspoon coriander
    • 1 teaspoon ground ginger
    • 1/2 cup polenta
    • 1 teaspoon pepper

    1. In a bowl, mix the yoghurt, lemon juice and 1/2 teaspoon salt. Toss the chicken in this mixture.
    2. Preheat the oven to 220 degrees C. In a bowl, mix the flour, paprika, turmeric, corinader, ginger, polenta, pepper and remaining 1 teaspoon salt. Coat the chicken with the flour mixture.
    3. Place the chicken pieces on a greased baking tray and bake 20 minutes. Turn and bake another 20 minutes.
