Chicken and Zucchini Wraps

These wraps contain sliced or deli chicken, a basil and cream cheese spread and roasted capsicums. They are perfect for a picnic.

Serves: 4 

  • 2 tablespoons olive oil
  • 3 cloves garlic, crushed
  • 2 zucchini, halved and thinly sliced
  • salt, to taste
  • 250g cream cheese
  • 1/2 cup basil leaves, chopped
  • 1/4 cup grated Parmesan
  • 4 flatbreads, such as pita or lavash
  • 250g cooked chicken slices
  • 350g roasted capsicums from a jar, drained

  1. In a frypan, heat the olive oil. Add garlic and cook 1 minute. Add zucchini and sprinkle with salt. Cook five minutes or until soft. Set aside.
  2. In a bowl, mix well the cream cheese, basil and Parmesan.
  3. Spread the cream cheese mixture over the flatbreads. Layer on the chicken slices. Top with roasted capsicum and the zucchini. Roll the flatbreads and enjoy!
