Apricot Chicken Drumsticks

This is a very easy and flavourful apricot glaze to baste grilled or barbecued chicken. The glaze will keep up to a month in the fridge.

Serves: 4 

  • 2 kg chicken drumsticks
  • 1 cup apricot jam
  • 1/2 cup red wine vinegar
  • 1 cinnamon stick
  • 2 tablespoons fresh chillies, finely diced

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Combine the jam, vinegar, cinnamon and chillies in a saucepan and boil until slightly thickened, about 5 minutes.
  2. Preheat the grill and arrange the drumsticks on a roasting tray. Grill 5 minutes, then turn and grill 5 more minutes. Brush all over with the glaze. Keep grilling until chicken is done, basting frequently.
