Greek Honey and Lemon Chicken

    Honey, cream, lemon and balsamic vinegar make a spectacular sauce for this simple Greek chicken recipe. Serve with a salad and rice.

    Serves: 4 

    • 4 boneless, skinless chicken breast halves
    • salt and pepper, to taste
    • 1/4 cup flour
    • 3 tablespoons olive oil
    • 4 tablespoons onion shallots, finely diced
    • 1 tablespoon honey
    • pinch allspice
    • 1 cup chicken stock
    • 1 tablespoon lemon juice
    • 1/4 cup thickened cream
    • 1 tablespoon balsamic vinegar

    1. Sprinkle the chicken breasts with salt and pepper and coat with flour. Heat the olive oil in a heavy frypan and cook the chicken 4 minutes on each side. Set aside.
    2. To the frypan add the shallots, honey and allspice. Simmer until shallots are wilted, about 2 minutes. Add chicken stock and lemon juice and bring to a boil. Add cream and boil until thickened, about 1 minute.
    3. Add balsamic and check for salt and pepper. Spoon the sauce over the chicken and serve!
