Satay chicken skewers are a lovely dinner and they are also good as a finger food at a party. This recipe also works well with pork instead of chicken.
In a mixing bowl, combine the chicken, sugar, 1 tablespoon fish sauce, curry powder and pepper. Mix well, cover and refrigerate 4 hours.
In a saucepan, mix the coconut milk, peanut butter and 2 teaspoons fish sauce. Bring to the boil and stir until well mixed. Place in a bowl and refrigerate.
Soak 12 wooden skewers then preheat the grill.
Thread the chicken on the skewers, and when the grill is hot cook for 10 minutes, turning often. Serve with the peanut sauce for dipping.
