Easy Chicken Korma Curry

    A very simple chicken korma curry that does not stint on the flavour! If you find spicy foods a bit overpowering you may want to reduce the chillies.

    Serves: 8 

    • 1 1/2 kg boneless, skinless chicken breasts
    • 1/4 cup vegetable oil
    • 8 cups onion, finely diced
    • 3 cloves garlic, finely diced
    • 5cm fresh ginger, grated
    • 3/4 cup water
    • 2 teaspoons paprika
    • salt, to taste
    • 1/2 cup tomato paste
    • 1 teaspoon cardamom pods, crushed
    • 4 green chillies, seeded and diced
    • 1 tablespoon coriander leaves

    1. Cut the chicken breasts into cubes. Heat 1/4 cup oil in a casserole dish and add the onion, garlic and ginger. Cook, stirring, until well browned - this may take a while, so keep stirring!
    2. Add the water, paprika, salt, tomato paste and cardamom pods. Stir in the chicken. Add the chillies and cover. Cook 15 minutes so the chicken is done but not dried out. Serve sprinkled with coriander.
