Tomato and Bread Salad

    Use up stale leftover bread in this simple bread salad. It's best to use a dense bread like sourdough, ciabatta or a baguette.

    Serves: 4 

    • 3 cups stale sourdough bread, cubed
    • 80ml olive oil
    • ` 1 clove garlic, crushed
    • 6 ripe tomatoes, diced
    • 3 tablespoons balsamic vinegar
    • salt and pepper, to taste
    • basil leaves, to garnish

    1. Toss the bread cubes with 1/2 the olive oil. Preheat the oven to 200 degrees C and bake the bread cubes until just toasted, about 15 minutes. Keep an eye on them so they don't burn.
    2. In a bowl, combine the tomatoes, crushed garlic, remaining olive oil and vinegar. Season with salt and pepper and toss well.
    3. Add the bread cubes, mix and garnish with basil.
