Minty Thai Salad Dressing
Tiny dried shrimp are a common ingredient in Thai cuisine. You can find them in packets in Asian markets. This Thai salad dressing is especially good on fresh vegetables like cucumbers.

3 tablespoons tiny dried shrimp
30ml fish sauce
60ml lime juice
3 teaspoons sugar
2 onion shallots, thinly sliced
2 spring onions, thinly sliced
2 tablespoons fresh mint, chopped
2 tablespoons fresh coriander, chopped
2 small Thai chillies, seeded and thinly sliced
- Using a mortar and pestle, a food processor or a spice grinder pulverise the dried shrimp.
- Combine the fish sauce, lime juice and sugar and stir until the sugar dissolves. Add the shallots, spring onions, mint, coriander and chillies. Add the dried shrimp and stir.
