Minty Thai Salad Dressing

    Tiny dried shrimp are a common ingredient in Thai cuisine. You can find them in packets in Asian markets. This Thai salad dressing is especially good on fresh vegetables like cucumbers.

    Serves: 4 

    • 3 tablespoons tiny dried shrimp
    • 30ml fish sauce
    • 60ml lime juice
    • 3 teaspoons sugar
    • 2 onion shallots, thinly sliced
    • 2 spring onions, thinly sliced
    • 2 tablespoons fresh mint, chopped
    • 2 tablespoons fresh coriander, chopped
    • 2 small Thai chillies, seeded and thinly sliced

    1. Using a mortar and pestle, a food processor or a spice grinder pulverise the dried shrimp.
    2. Combine the fish sauce, lime juice and sugar and stir until the sugar dissolves. Add the shallots, spring onions, mint, coriander and chillies. Add the dried shrimp and stir.
