Spicy Thai Salad Dressing with Lemongrass

    This is a universal Thai salad dressing which you can serve with so many things. It's equally good on barbecued prawns as it is on fresh pawpaw.

    Serves: 4 

    • 30ml fish sauce
    • 75ml fresh lime juice
    • 2 teaspoons sugar
    • 3 onion shallots, thinly sliced
    • 2 stalks lemongrass, very thinly sliced
    • 2 Thai chillies, seeded and thinly sliced

    1. Combine all the ingredients in a bowl or jar. Stir well until the sugar has dissolved.
