A great light lunch or side dish at a feast this is a simple bread salad comprised of baguette, tomatoes and prawns, garnished with basil.

Serves: 4 

  • 200g prawns, peeled and deveined
  • salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 teaspoon chilli flakes
  • 6 cloves garlic, sliced
  • 1 tablespoon lemon juice
  • 4 large tomatoes, cut into wedges
  • 1/2 baguette, cut into large cubes and toasted
  • fresh basil leaves

  1. Sprinkle prawns with salt and pepper. Heat olive oil, chilli flakes and garlic in a nonstick frypan and cook until fragrant, about 3 minutes. Add prawns to frypan and cook until just done, about 2 minutes. Stir in lemon juice and take off the heat.
  2. Place tomatoes in a salad bowl and sprinkle lightly with salt. Add toasted bread, prawns and basil leaves and toss gently.
