Lebanese Pita Bread Salad (Fattoush)

    Lebanese pita bread salad is also called fattoush. If you want you could add some cooked chicken to make it more of a meal.

    Serves: 4 

    • 3 small pita breads
    • 4 cups cos lettuce leaves, chopped
    • 1 cucumber, diced
    • 2 cups cherry tomatoes, halved
    • 2/3 cup feta cheese, crumbled
    • 1/2 red onion, sliced
    • 1/2 cup mint leaves, torn
    • 100ml lemon juice
    • 1/4 cup olive oil
    • 1 teaspoon sugar
    • salt and pepper, to taste

    1. Preheat the oven to 160 degrees C. Bake the pitas on a baking tray until dry and crisp, about 12 minutes. Let cool.
    2. In a salad bowl, combine lettuce, cucumber, tomatoes, feta, onion and mint. Tear the pitas into bite sized chunks and add to the salad. Toss.
    3. In a small bowl, whisk together the lemon juice, olive oil, sugar and salt and pepper. Drizzle over the salad. Serve!
