    Tuscan bread salad, also known as panzanella, is comprised of toasted ciabatta bread, tomatoes and cucumbers in a tangy vinaigrette.

    Serves: 6 

    • 1 red capsicum
    • 200g ciabatta bread, cut into cubes and toasted
    • 2 cups chicory or radicchio
    • 2 tablespoons capers
    • 400g tomatoes, cut into wedges
    • 1 cucumber, peeled and sliced
    • 3 tablespoons balsamic vinegar
    • 1/4 cup olive oil
    • 1 anchovy fillet, finely diced
    • salt and pepper, to taste
    • torn basil leaves

    1. Preheat the grill. Cut the capsicum in half and remove the seeds. Place on a baking tray skin side up and grill until blackened, about 10 minutes. Place in a plastic bag and seal - this will make it easier to peel. After about 10 minutes peel and diced the capsicum.
    2. In a salad bowl combine the toasted bread cubes, capsicum, chicory or radicchio, capers, tomatoes and cucumber.
    3. In a small bowl combine vinegar, oil, anchovy, salt and pepper. Whisk well and drizzle over the salad. Garnish with torn basil leaves.
