Bread Salad with Tomatoes and Cucumber

    A bread salad is a delicious use for leftover bread and very summery. This is best made with a rustic, cobb or country style loaf.

    Serves: 4 

    • 4 thick slices stale rustic bread
    • 4 tomatoes, diced
    • 1/2 red onion, diced
    • 1 red capsicum, seeded and diced
    • 1 cucumber, peeled and diced
    • 1/2 cup fresh basil, torn
    • 1/4 cup red wine vinegar
    • 1/4 cup olive oil
    • 1 clove garlic, finely diced
    • salt and pepper, to taste

    1. Cook the bread under the grill until toasted, then tear it into bite sized pieces.
    2. In a salad bowl, place the tomatoes, onion, capsicum, cucumber and basil. Toss. Add the bread.
    3. In a bowl combine the vinegar, oil, garlic, salt and pepper and whisk well with a fork. Drizzle over the salad and serve.
