Warm Chicken and Orzo Salad

    A warm chicken salad with orzo pasta, which is a pasta that resembles rice. It is dressed with a bright lemony dressing.

    Serves: 4 

    • 3/4 cup orzo
    • 1 boneless, skinless chicken breast
    • 1 cucumber, diced
    • 1 red capsicum, seeded and diced
    • 3 spring onions, sliced
    • 1/2 cup feta cheese, crumbled
    • Dressing
    • 3 tablespoons lemon juice
    • 2 tablespoons olive oil
    • salt and pepper, to taste
    • 1 clove garlic, finely diced

    1. Combine all the dressing ingredients in a bowl and whisk well. Set aside.
    2. Cook orzo in boiling water until just done, about 12 minutes. Drain.
    3. Meanwhile, fry the chicken breast about 4 minutes per side. Remove from the pan and thinly slice.
    4. In a salad bowl, combine the orzo, chicken, cucumber, capsicum and spring onions. Drizzle the dressing over and toss. Sprinkle with feta cheese and serve.
