BBQ Chicken Salad

    When I don't feel like cooking I buy a barbecued chook at the shop and make this easy warm chicken salad with peaches and prepackaged spinach and rocket.

    Serves: 4 

    • Dressing
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons olive oil
    • 2 tablespoons onion shallots, finely diced
    • 2 teaspoons lemon juice
    • 1 teaspoon sugar
    • 1 teaspoon Dijon mustard
    • salt and pepper, to taste
    • Salad
    • 2 cups barbecued chicken meat, shredded
    • 1 peach, sliced
    • 1/2 red onion, thinly sliced
    • 1 (120g) bag baby spinach and rocket
    • 2 tablespoons feta, crumbled

    1. Combine all the dressing ingredients in a bowl and whisk until the sugar is dissolved.
    2. Combine all the salad ingredients in a bowl except the feta. Toss with the dressing. Sprinkle feta over the top.
