Cucumber and Tomato Tabbouleh

    I am a big fan of the tangy flavours and satisfying bulk of a good tabbouleh, in this version I add fresh cucumber for juiciness.

    Serves: 6 

    • 1 cup bulgur (cracked wheat)
    • 1 cup boiling water
    • 3 tablespoons lemon juice
    • 2 tablespoons olive oil
    • 3 cloves garlic, finely diced
    • 2 large tomatoes, diced
    • 1 medium cucumber, peeled, seeded and diced
    • 1 cup fresh parsley, chopped
    • 3 spring onions, thinly sliced
    • 1/4 cup fresh mint, chopped
    • 3/4 teaspoon salt
    • 1/2 teaspoon black pepper

    1. Combine the bulgur and boiling water in a bowl and let rest 30 minutes or until water is absorbed. Stir in the lemon juice, olive oil and garlic. Let cool.
    2. Combine the bulgur with all remaining ingredients in a salad bowl. Toss and serve.
