Artichoke and Quinoa Salad

    In early spring when artichokes are at their best, try making this simple and delicious quinoa salad. A great side dish with fish.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 cup spring onions, sliced
    • 1/2 teaspoon fresh thyme leaves
    • 250g jarred artichoke hearts, drained
    • 1 cup chicken stock
    • 1/2 cup quinoa
    • 1 cup parsley, chopped
    • 1 1/2 teaspoons lemon juice
    • salt, to taste

    1. Heat up the oil in a saucepan. Add the onion and thyme and saute until the onion is tender, about five minutes. Add the artichokes and cook 2 minutes. Add stock and quinoa, bring to a simmer, cover and cook until liquid is absorbed, about 15 minutes.
    2. Stir in parsley, lemon juice and salt. Serve warm.
