BBQ Thai Beef Salad

    This recipe is a great team effort, hubby does the steak on the BBQ while I do the salad in the kitchen. Combine and you have a great healthy dinner.

    Serves: 2 

    • Steak
    • 300g sirloin steak
    • 3 tablespoons soy sauce
    • 1 teaspoon peanut oil
    • 2 tablespoon vegetable oil
    • 2 cloves garlic, crushed
    • Salad Dressing
    • 1 tablespoon finely diced mint
    • 1 tablespoon finely diced coriander
    • 2 tablespoons lime juice
    • 2 teaspoons fish sauce
    • 1 clove garlic, finely diced
    • 1 red chilli, finely diced, optional
    • Salad
    • 1 small packet glass noodles
    • 1 carrot, cut into matchsticks
    • 3 spring onions, sliced
    • 1 handful mint
    • 1 handful coriander
    • lettuce leaves

    1. Steak: Keeping the steak whole place it in a marinade of the soy sauce, peanut oil, vegetable oil and garlic. Let it sit for 45 minutes.
    2. Preheat the BBQ to medium then cook until done to your preferred completeness. Let rest for 5 minutes before slicing and putting on top of the salad.
    3. Salad Dressing: Place all of the ingredients for the salad dressing in a glass bowl and combine. Leave to infuse until ready to serve.
    4. Salad: Half fill a large glass bowl with boiling water. Add the glass noodles and carrot to soften.
    5. In the serving bowl create a bed of lettuce. Combine the softened noodles and carrot with the spring onion, mint and coriander then place on top.
    6. To Serve: On top of the salad place the BBQ steak slices then drizzle with the dressing. Garnish with additional coriander and your favourite Asian garnishes.
