Easy Coconut and Vanilla Ice Cream

I have made this ice cream after I have experimented and perfected it, it is now so creamy and delicious you just have to try it! So simple to make you can't go wrong!

Serves: 4 

  • 2 tins coconut milk, refrigerated for at least four hours
  • 1/4 cup thickened cream
  • 2 eggs (60g each)
  • 1 cup caster sugar
  • 1 teaspoon vanilla bean paste

Preparation:20min  ›  Extra time:8hours chilling  ›  Ready in:8hours20min 

  1. After coconut milk has had 4 hours in fridge, take out and place in mixing bowl with all other ingredients and beat until blended.
  2. Place mixture in ice cream maker and mix for 15 to 20 minutes.
  3. Place all ice cream mixture in container of your choice and place in freezer for at least 4 hour before serving..
  4. Just before serving your ice cream, toast some shredded coconut to sprinkle on top for that added crunch and flavour......yum!


You can use vanilla extract if you don't have vanilla paste
